Shortbread Coffee Fudge Brownies

This recipe is a combination of two of my favorite desserts, shortbread and brownies with a light coffee flavor.

This is a fan-submitted recipe. It was not made in the kitchen of the Door County Coffee Cafe.

Featured ingredient: Breakfast Blend Coffee 10 oz. Bag Ground


  • 2 cups all purpose flour
  • 1/2 cup powdered sugar
  • 1 cup butter, softened
  • 1 tablespoon Door County Coffee Breakfast Blend ground coffee
  • 1 16 ounce package Fudge Brownie Mix
  • 1/4 cup cold brewed coffee
  • plus 1 tablespoon ground coffee
  • 2 cups powdered sugar
  • 1-2 tablespoons cold brewed coffee
  • 2 teaspoons unsweetened cocoa



  1. Preheat oven to 350°
  2. Lightly spray a 9" x 13" baking dish with non stick cooking spray.
  3. In a medium bowl, combine flour, sugar, butter and Door County Coffee Breakfast Blend ground coffee.
  4. Mix until crumbly.
  5. Press mixture into the prepared baking dish.
  6. Bake for 17 -20 minutes until light brown.
  7. Cool on rack.
  8. Prepare brownie mix according to package directions using cold brewed coffee in place of the water.
  9. Spread batter over the shortbread crust.
  10. Bake 23 - 28 minutes (don't overcook).

  1. In small bowl, mix powdered sugar, cocoa and cold coffee, Mix until smooth.
  2. Spread glaze evenly over warm brownies.
  3. Cool on rack.
