Door County Coffee Cake

This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Café.
Ingredients:

Featured ingredient: Lighthouse Blend Decaf Coffee 10 oz. Bag Ground

Cake:

  • 2 eggs- beaten
  • 1 cup sugar
  • 1 cup cake flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 cup brewed Door County Coffee Lighhouse Blend (made with scalded milk, not water)
  • 1 Tbsp melted butter
  • 1 tsp vanilla
Topping:
  • 6 Tbsps melted butter
  • 1/2 cup packed brown sugar
  • 1/4 cup cream
  • 1/2 tsp vanilla
  • 1 cup moist coconut

Instructions:

Cake:

  1. Greased 8" pan.
  2. Beat eggs, add sugar, beat well.
  3. Add flour sifted with salt and baking powder, alternating with coffee and butter.
  4. Baked at 350° for 45 min.
Topping:
Combine, Broil until brown and bubbly, Spread over cake.
