Kicked Up French Roast Chicken

This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Cafe.

Featured ingredient: French Roast Coffee 10 oz. Bag Ground

  • 1 Cup Brewed French Roast Coffee
  • 6 Garlic Cloves, Peeled, and Chopped
  • 3 Tablespoons Fresh Lime Juice
  • 3 Green Onions, Finely Chopped
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Vegetable Oil
  • 1 Tablespoon Brown Sugar
  • 1/4 Teaspoon Ground Nutmeg
  • 1/2 Teaspoon Dried Chili Flakes
  • 1/2 Teaspoon Ground Ginger
  • 1/2 Teaspoon Ground Black Pepper
  • 1 Bay Leaf
  • 1 Teaspoon Salt
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Ground Cinnamon
  • 2 Teaspoons Ground Allspice
  • 1 Teaspoon Dried Thyme
  • 1 Whole Chicken Cut Into 8 Pieces


  1. Mix the following ingredients into a resealable 2 gallon freezer bag; brewed French Roast Coffee, Garlic Cloves, Green Onions, Lime Juice, Soy Sauce, Vegetable Oil, Brown Sugar, Nutmeg, Chili Flakes, Ginger, Black Pepper, Bay Leaf, Salt, Onion Powder, Cinnamon, Allspice, and Thyme
  2. Add chicken pieces, seal, and marinate for at least 2 hours, or overnight in the refrigerator
  3. Preheat oven to 350 degrees
  4. Place marinated chicken skin side up onto a wire rack, in a 10 x 14.5 inch roasting pan, and add 1 cup of marinade into the pan
  5. Bake uncovered for 1 hour, pierce with fork, check juice, if it runs clear, it's done
