Door Country Coffee Breakfast Cornmeal Pudding

This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Café.
Ingredients:
Featured ingredient: French Roast Coffee 10 oz. Bag Ground
- 1/2 cup honey
- 1/2 teaspoon salt
- 3 tablespoons butter
- 2 cups milk
- 2 cups brewed Door Country Coffee French Roast coffee
- 1 cup yellow cornmeal
- 3 eggs
- Additional milky coffee for serving on top.
Instructions:
- In a large saucepan combine the honey, salt, butter, 2 cups coffee & 1 cup milk
- Bring to a boil over medium heat
- In a small bowl whisk the cornmeal and 1 cup milk until smooth
- Reduce heat to low and cook for 5 minutes more. Always slowly stirring
- Cover and take off the heat
- Beat the eggs in a small bowl
- Stir 1 cup of the hot cornmeal into the eggs and whisk rapidly until smooth
- Gradually add the cornmeal-egg mixture back into the saucepan
- Cover and cook on slow for another 5 minutes
- Serve with milky coffee on top
