Cowboy Burgers

This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Café.

 

Ingredients

Featured ingredient: Colombian Coffee 10 oz. Bag Ground

  • 2 tablespoons mayonnaise
  • 2 tablespoon barbeque sauce
  • 4 tablespoons butter, divided
  • 2 large onions, sliced
  • 2 teaspoons kosher salt, divided
  • 1 1/3 cups warm strong brewed Door County Columbian Coffee
  • 1/2 cup maple syrup
  • Pinch crushed red pepper flakes
  • 12 slices bacon
  • 1 pound ground chuck
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons ground Door County Columbian Coffee
  • 4 sandwich rolls, split
  • 1 tablespoon vegetable oil
  • 8 thin slices Blue Monterey Jack cheese
  • 1/2 cup shredded lettuce
  • 8 thin slices tomato

Instructions

  1. Preheat oven to 400 degrees. Place a raised rack onto a large rimmed baking sheet; set aside.
  2. In a small bowl, mix together the mayonnaise and barbeque sauce; set aside.
  3. Melt 2 tablespoons butter in a large non-stick skillet over medium low heat. Add in the onions and 1 teaspoon salt; cook until golden brown, approximately 30 minutes, stirring occasionally.
  4. Meanwhile, in a large bowl, mix together the warm coffee, maple syrup and red pepper flakes. Add in the bacon and submerge totally in the coffee mixture; allow to marinate for 10 minutes.
  5. Remove from marinade and lay slices, in a single layer, onto the reserved baking sheet. Place into preheated oven and bake until crispy, approximately 18 - 20 minutes.
  6. Evenly divide the ground chuck into 4 portions and form each portion into a burger slightly larger than the sandwich rolls.
  7. Season the burgers evenly with the remaining 1 teaspoon salt and the black pepper. Sprinkle 3/4 teaspoon of the ground coffee onto each side of the burgers, slightly pressing the grounds into the burgers.
  8. Heat 1 tablespoon butter in a large non-stick skillet or griddle over medium heat. Place the rolls, cut side down into skillet and cook until lightly toasted, approximately 1 - 2 minutes; set rolls aside.
  9. Add the vegetable oil and remaining 1 tablespoon butter to the skillet. Place the burgers into the skillet and cook until the coffee coating is browned and has created a crust on the burger, approximately 3 minutes, being sure to not move the burgers around while cooking.
  10. Flip the burgers over and cook the second side in the same manner until burgers are cooked to desired temperature. During the last 2 minutes of cooking time, top burgers with the cheese and allow to melt.
  11. To assemble the burgers, place the roll bottoms, cut side up, onto work surface. Top evenly with lettuce, tomato, a burger, onion, and bacon. Spread the cut side of the roll top with the mayo/bbq sauce mixture, place sauce side down onto burgers and enjoy!,

Note: The blue Monterey jack cheese can be found in the deli section of your grocery store. If they do not carry it, you can substitute crumbled blue cheese.
