Featured ingredient: Breakfast Blend Coffee 10 oz. Bag Ground

  • 2 large sweet onions
  • 1 quart strongly brewed Door County Coffee Breakfast Blend; cold
  • 2 tablespoons pepper sauce*
  • 1 tablespoon kosher salt; divided use
  • 1-1/2 teaspoons granulated sugar; divided use
  • 6-8 cups vegetable oil
  • 1-1/2 cups all-purpose flour
  • 3/4 cup cornstarch

  1. Peel onions and cut crosswise into slices about 3/8 inch thick. Pull apart into rings.
  2. In a large bowl stir together coffee, pepper sauce, 1-1/2 teaspoons salt and 1 teaspoon granulated sugar. Put onion rings in coffee mixture and press down so that liquids cover the onion. Cover bowl and refrigerate for 1-2 hours.
  3. In a large bowl whisk together flour, cornstarch, remaining 1-1/2 teaspoons salt; and remaining 1/2 teaspoon granulated sugar.
  4. In small batches, lift the onion rings from the liquids and dredge in the flour mixture. When all the rings have been floured, repeat the process by dipping the coated onion rings in the coffee mixture and then in the flour mixture for a second time.
  5. Lightly cover and refrigerate battered rings for 1 hour. When ready to fry onions heat oil to 365 degrees F. in a deep fryer. In small batches that don’t overcrowd the deep fryer, drop in the onion rings and fry 3 to 4 minutes until a golden brown. Drain on paper towels or wire rack placed over a sheet pan. Serve warm with favorite dipping sauce.

Makes 4 servings.
