"This recipe is a fantastic combination your richly flavored coffees and the complex flavor of the black garlic, the sweetness of the scallops and the smokiness of the grill. Simply fantastic!"

This is a Door County Coffee Fan reciepe. It was not made in the kitchens of the Door County Coffee Cafe.

Featured ingredient: Sinful Delight Coffee 10 oz. Bag Ground

  • 12 Sea Scallops, cleaned and patted dry
  • 12 Thin, centercut, applewood-smoked bacon
  • 12 Bamboo skewers, soaked in warm water
  • 1 Cup Kecap Manis
  • 1 Head of Black Garlic cloves, peeled
  • 2 Tablespoons Zhenjiang vinegar
  • 1 Teaspoon Sambal
  • 1 Tablespoon & 1 Teaspoon finely ground Door County Sinful Delight Coffee
  • 1 Tablespoon & 1 Teaspoon Togarashi
  • 2 Tablespoons Black Sesame Oil

1. Place all of the marinade ingredients except one teaspoon of the togarashi and one teaspoon of the coffee into the bowl of a blender and blend until smooth
2. Pour over the scallops in a non-reactive dish, cover with plastic wrap, refrigerate and let marinate for 30 minutes
3. Meanwhile cook the bacon in the over or microwave until cooked but still pliable
4. Remove the scallops from the marinade and pat them dry with paper towels
5. Wrap each scallop with a slice of bacon and skewer it with a bamboo skewer
6. Brush both sides liberally with the sesame oil, sprinkle each side with the remaining coffee and togarashi
7. Grill over medium-high coals 2-3 minutes per side, turning often, until the scallops are just opaque and the bacon is cooked
8. Cooking time may vary depending on the size of your scallops
9. Be careful not to overcook your scallops
10. Microwave or boil the remaining marinade on the stovetop for 1-2 minutes and serve on the side for those who may want more sauce
